BERRY CAKE ROLL

30 minutes • Makes 12 slices 

Sponge Cake

  • 6 eggs
  • Pinch of salt
  • 50g mixed nut flour or 30g parsley root flour

Cream

  • 2/3 cup butter
  • 2/3 cup Berry Jam 
  • 1/2 scoop KetoCitra®

TIP!

You can use different berries for this cake. Please note that strawberries are lowest in carbs and that raspberries are high in oxalates.

 

PREPARATION 

  • Preheat the oven to 350 °F.
  • Whip the egg whites with a pinch of salt until stiff peaks form. Whisk in the yolks one by one, continuously whisking. Carefully fold in the flour being careful no to break the structure of the whipped eggs - they serve as a raising agent.
  • Spread the batter on a baking tray lined with parchment paper.
  • Bake for about 15 minutes until golden. Carefully peel the parchment paper off the cake, roll it up and wrap in a kitchen towel.
  • Let it cool completely.
  • Whip the softened butter with the KetoCitra® until creamy. Add the jam and vanilla and whisk with an electric mixer until well mixed and homogenous.
  • Spread the cream over the sponge cake and roll it up tight. Wrap in plastic wrap and put in the fridge for at least an hour before slicing and serving.
